In Pursuit of the Ultimate Biryani

店内

In August 2021, "Biriyani Osawa," a biryani specialty restaurant, opened its doors in Kanda, Tokyo. Helmed by owner-chef Takamasa Osawa, this restaurant offers, what he claims is, the ultimate biryani. The menu is exclusively biryani, a testament to the restaurant's singular focus. Each dish is meticulously crafted, capturing the essence of biryani that only large-scale preparation can achieve, and hinting at new possibilities for this beloved dish.

For a deeper dive into Takamasa Osawa's culinary journey, check out the article in the Financial Times.

A Fusion of Passion and Science

Takamasa Osawa, Chef

Takamasa Osawa

Takamasa Osawa, the mastermind behind Biriyani Osawa, first fell in love with biryani during his student years in India. Driven by a philosophy he calls "Biryani or Die," Osawa immersed himself in research, honed his skills at Indian restaurants, and eventually opened "Biriyani Osawa." He approaches biryani with a scientific mindset, meticulously analyzing ingredients and cooking techniques to achieve perfection. This blend of passion and science culminates in what he proudly presents as the ultimate biryani.
